RECIPE: Crispy Tortilla Crust Breakfast Quiche
- Serving Size: 4
- Prep Time: 10 minutes
- Cook Time: 25 minutes
Ingredients
- 3 Rise & Puff Tortillas (cut/trimmed as needed to fit pan)
- 5 large eggs
- 1/4 cup heavy cream
- 1/2 to 3/4 cup shredded Monterey Jack cheese (or sharp cheddar / Gruyère)
- 5 pieces of cooked bacon (1 cooked bacon strip, chopped, for garnish)
- 3 green onions, sliced (1 sliced for garnish)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper

Directions
- Prep Equipment: Preheat your oven to 375°F. Lightly grease an 8x8-inch baking pan (a 9-inch pie dish also works great).
- Build the Crust: Place the Rise & Puff tortillas into the pan, overlapping them along the bottom and pressing up the sides. Cut or trim as needed to neatly cover the corners and fill any gaps.
- Whisk the Egg Mixture: In a medium bowl, whisk together the eggs, heavy cream, garlic powder, onion powder, salt, and black pepper until fully combined.
- Layer the Fillings: Evenly scatter the shredded cheese, chopped bacon, and 2 sliced green onions across the bottom of the tortilla crust. Pour the egg mixture over the top.
- Bake Uncovered: Bake uncovered at 375°F for 25 minutes, until the egg center is completely set and the exposed tortilla edges are lightly golden brown.
- Garnish & Serve: Remove from the oven and sprinkle the reserved chopped bacon and remaining sliced green onion over the top. Let cool for 5 minutes, slice, and serve warm.
Chef's Tips
Protein Boost Swap: Replace the 1/4 cup of heavy cream with 1/4 cup of blended cottage cheese. It adds extra protein and a rich, creamy texture without changing the bake time.
A Blank Canvas: This quiche is infinitely customizable. Feel free to mix in sautéed mushrooms, diced tomatoes, spinach, or whatever cheeses you have on hand in your fridge.
