Ingredients

  • 3 Rise & Puff Tortillas (cut/trimmed as needed to fit pan)
  • 5 large eggs
  • 1/4 cup heavy cream
  • 1/2 to 3/4 cup shredded Monterey Jack cheese (or sharp cheddar / Gruyère)
  • 5 pieces of cooked bacon (1 cooked bacon strip, chopped, for garnish)
  • 3 green onions, sliced (1 sliced for garnish)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Directions

  1. Prep Equipment: Preheat your oven to 375°F. Lightly grease an 8x8-inch baking pan (a 9-inch pie dish also works great).
  2. Build the Crust: Place the Rise & Puff tortillas into the pan, overlapping them along the bottom and pressing up the sides. Cut or trim as needed to neatly cover the corners and fill any gaps.
  3. Whisk the Egg Mixture: In a medium bowl, whisk together the eggs, heavy cream, garlic powder, onion powder, salt, and black pepper until fully combined.
  4. Layer the Fillings: Evenly scatter the shredded cheese, chopped bacon, and 2 sliced green onions across the bottom of the tortilla crust. Pour the egg mixture over the top.
  5. Bake Uncovered: Bake uncovered at 375°F for 25 minutes, until the egg center is completely set and the exposed tortilla edges are lightly golden brown.
  6. Garnish & Serve: Remove from the oven and sprinkle the reserved chopped bacon and remaining sliced green onion over the top. Let cool for 5 minutes, slice, and serve warm.
