Roasted Feta & Egg Tortilla Bake

This simple dish takes the viral internet trend and packs it into a crispy, golden Rise & Puff tortilla bowl filled with creamy feta and rich, runny eggs. With just a handful of fresh ingredients, you get a beautiful blend of warm, salty, and sweet flavors that feels like a restaurant experience right at home.

Ingredients

  • 4 Rise & Puff tortillas
  • 1 block (7–8 oz) feta cheese, cut into 4 equal portions
  • 1 pint cherry tomatoes (6-8 tomatoes per individual portion)
  • 8 large eggs (2 eggs per individual portion)
  • Fresh basil leaves
  • Salt and black pepper to taste

Directions

  1. Prep the Tortilla Bowls: Preheat your oven to 400°F. Lightly grease four individual oven-safe dishes or ramekins (about 5–6 inches wide). Gently press one Rise & Puff tortilla into each dish, letting the edges fold naturally to create a deep bowl shape.
  2. Layer the Base: Place one portion of feta cheese directly in the center of each tortilla bowl. Divide the cherry tomatoes evenly among the four dishes, tucking them all around the sides of the cheese. Season the tomatoes and feta with a pinch of salt and black pepper.
  3. The First Roast: Place the individual dishes onto a large baking sheet for stability. Bake for 15 minutes, or until the cherry tomatoes begin to blister and pop, and the edges of the tortillas turn a beautiful light golden brown.
  4. The First Mash: Carefully slide the baking sheet out of the oven. Before adding the eggs, use a fork to gently mash the warm feta and juicy tomatoes together right inside the tortilla bowl to form a chunky, creamy sauce base. 
  5. The Egg Drop & Foil Cover: Use a spoon to create two small wells in the mashed tomato and feta mixture. Crack 2 eggs into each dish. To prevent the exposed edges of the tortilla from burning and to help the eggs cook faster, loosely tent the top of the dishes with a sheet of aluminum foil.
  6. The Final Mash and Serve: Return the covered dishes to the oven and bake for 15-20 minutes. Pull from the oven and garnish with plenty of torn fresh basil leaves. Using a fork, mix the eggs into the feta and tomatoes mixture, letting the runny egg yolks create a rich, creamy sauce. Serve immediately.

Lightly grease a large, 9x13-inch baking dish and lay the 4 tortillas inside, overlapping them slightly to line the bottom and sides of the pan. Cut the whole block of feta in half, place it in the center, surround it with the whole pint of cherry tomatoes, and season with salt and pepper. Bake at 400°F for 15 minutes, smash all the tomatoes and feta, then crack all 8 eggs into the dish. Season the eggs with salt and pepper. Cover with foil and bake for an additional 15-20 minutes until the eggs are cooked to your liking. Finally, add the torn basil and mix everything together.

Tips for Success

  • The Foil Hack: Covering the dish with aluminum foil is a crucial step. It traps the steam to cook the egg quickly from the top down while shielding your tortilla edges from getting too dark.
  • Watch the Yolks: The eggs will continue to cook slightly even after you pull them from the oven. Pull them out just as the whites finish setting to ensure your yolks stay perfectly runny for the ultimate mash.
