Breakfast of Champions
Serves: 1-2 people (makes 2 breakfast tacos)
- 2 Rise & Puff Original Tortillas
- 3 Pasture Raised Eggs
- Splash of Milk
- ¼ Cup Shredded Grass-Fed Cheese
- 3 Tablespoons Blue House Farms Salsa
- ¼ teaspoon of Salt
Creating delicious dishes has everything to do with quality ingredients and care. These breakfast tacos are unbelievably simple, using eggs from my backyard chickens, grass-fed cheddar cheese, salsa from my local farm (best dry farmed tomatoes ever, canned at their prime and full of flavor) - all on top of our freshly made Sonoran Style tortillas from Rise & Puff.
First, I cooked my tortillas in a dry cast iron pan. Next I scrambled my eggs with a splash of milk, seasoned with salt and I add the cheese when the eggs are 75% of the way cooked - just long enough to melt the cheese. Remove from the heat and assemble the eggs with a fresh spoon of salsa.
Each ingredient carries its own flavor and texture, while complementing the whole dish. You will be hooked on these fresh egg tacos from the first bite – trust me.
