Gyro Salad Wrap

Ground Lamb & Beef with Cucumber Yogurt Sauce
Serves: 4 people
Ingredients
- ½ Pound of Markegard Family Grass-Fed ground beef
- ½ Pound of Markegard Family Grass-Fed ground lamb
- 1 Yellow onion, diced small
- 4 Rise & Puff Original Tortillas
- ½ Cup whole milk yogurt
- ½ Cup seeded cucumber, shredded on a cheese grater
- 1 teaspoon sumac, ground
- 1 teaspoon cumin, ground
- 1 teaspoon Mediterranean oregano
- ½ teaspoon coriander, ground
- ½ teaspoon salt
- 1 Pinch black pepper, ground
- 2 Tablespoons extra-virgin olive oil
- 1 Tablespoon red wine vinegar
Garnishes
- ½ Cup crumbled feta cheese
- 8 Sprigs cilantro leaves, picked
- 8 Leaves shredded romaine lettuce
- ½ Cup kalamata olives, sliced
- 1 Red onion, sliced thin
Method
- In a medium mixing bowl, combine the ground beef, yellow onion, cumin, oregano, salt and coriander until fully incorporated
- Sauté the meat mixture in 1 Tablespoon of extra virgin olive oil until browned and fully cooked
- In another medium mixing bowl, combine the whole milk yogurt, cucumbers and sumac. Mix until fully incorporated and store chilled until use.
- Finally, in a third mixing bowl, combine the list of garnishes with red wine vinegar, black pepper and olive oil.

Cook off Rise & Puff tortillas and create a wrap with the meat mixture, yogurt sauce and romaine salad!
