Ground Lamb & Beef with Cucumber Yogurt Sauce


Serves: 4 people


Ingredients

  • ½ Pound of Markegard Family Grass-Fed ground beef
  • ½ Pound of Markegard Family Grass-Fed ground lamb
  • 1 Yellow onion, diced small
  • 4 Rise & Puff Original Tortillas
  • ½ Cup whole milk yogurt
  • ½ Cup seeded cucumber, shredded on a cheese grater
  • 1 teaspoon sumac, ground
  • 1 teaspoon cumin, ground
  • 1 teaspoon Mediterranean oregano
  • ½ teaspoon coriander, ground
  • ½ teaspoon salt
  • 1 Pinch black pepper, ground
  • 2 Tablespoons extra-virgin olive oil
  • 1 Tablespoon red wine vinegar

Garnishes

  • ½ Cup crumbled feta cheese
  • 8 Sprigs cilantro leaves, picked
  • 8 Leaves shredded romaine lettuce
  • ½ Cup kalamata olives, sliced
  • 1 Red onion, sliced thin

Method

  • In a medium mixing bowl, combine the ground beef, yellow onion, cumin, oregano, salt and coriander until fully incorporated
  • Sauté the meat mixture in 1 Tablespoon of extra virgin olive oil until browned and fully cooked
  • In another medium mixing bowl, combine the whole milk yogurt, cucumbers and sumac. Mix until fully incorporated and store chilled until use.
  • Finally, in a third mixing bowl, combine the list of garnishes with red wine vinegar, black pepper and olive oil.


The Build

Cook off Rise & Puff tortillas and create a wrap with the meat mixture, yogurt sauce and romaine salad!
